A quick and easy way to eat lots of broccoli!  Get more from this super, nutrition filled, cruciferous veggie by whizzing it up into a delicious pesto with healthy fats from toasted pine nuts and hemp seed oil.  It’s a really delicious nutty combination with pasta and is equally as tasty both warm and cold straight from the fridge so it makes a great lunch box filler too!

First, assemble all of the ingredients.  You will need;

  • Broccoli
  • Basil
  • Lemon
  • Garlic
  • Pine nuts
  • Nutritional yeast flakes
  • Hemp seed oil
  •  Sea salt and pepper for seasoning

Toast the pine nut by placing them into a frying pan and dry frying them (without oil) for just a few minutes by continuously tossing them in the pan.  They burn quickly once heated so do not stop tossing them until they are golden, then take them off the heat immediately!

Break the broccoli into small florets and place it into a food processor with all the ingredients, including the toasted pine nuts;

Process until you reach a coarse, grainy texture;

That’s it! You have made your pesto which is now ready for stirring through your cooked pasta;

NB: RETAIN 1-2 CUPS OF THE PASTA WATER AFTER COOKING.  THIS STARCHY WATER CAN BE ADDED GRADUALLY TO THE PASTA/PESTO MIX TO MAKE THE PESTO MORE SAUCE LIKE.  ADD AS LITTLE OR AS MUCH AS YOU LIKE WHILE STIRRING THROUGH.

Top with any remaining toasted pine nuts and season to taste!

Ingredients

Pasta

  • 2 servings spelt pasta or any you prefer

Pesto

  • 1 large head broccoli washed, broken into florets
  • 1 large handful basil leaves
  • 1/2 cup nutritional yeast flakes
  • 2 cloves garlic peeled
  • 1/4 cup hemp seed oil
  • 1/3 cup pine nuts toasted
  • 1 juice of lemon

Instructions

Pasta

  1. Cook the pasta as per packet instructions.

Pesto

  1. Place all of the prepared pesto ingredients into a food processor and blitz until you reach a coarse, grain like texture.

  2. Drain the pasta but retain 1-2 cups of the cooking liquid which you can use to create a sauce with the pesto.  Turn OFF the heat.

  3. Stir the pesto mixture through the hot pasta, adding as much of the retained liquid as you prefer.  Place the lid on the pan and leave to stand (heat off) for a few minutes for the steam to cook through the broccoli in the pesto.

  4. After a few minutes, it's ready to serve! Top with any remaining toasted pine nuts and season with sea salt and ground black pepper to taste.
