Buckwheat Groats in Coconut Milk with Hemp hearts & Pecans

  • 2/3 cup buckwheat groats rinsed under cold water
  • 2/3 cup coconut milk from a carton not thick milk from a can
  • 1 tsp granulated xylitol or stevia for desired sweetness
  • 1 tbsp hemp hearts
  • 1 handful pecans
  • 1 tsp pure Maple syrup optional


  • Place the rinsed buckwheat groats in a bowl with the coconut milk and leave to soak overnight or at least for 3-4 hours for them to become soft for chewing.  Leaving them for less time will mean they will be more crunchy but you are still able to eat them like this.
  • Once ready for serving, top with the remaining ingredients and eat immediately.


This recipe requires overnight soaking if you want the buckwheat goats to be soft for chewing.
