Buckwheat Groats in Coconut Milk with Hemp hearts & Pecans

Ingredients

  • 2/3 cup buckwheat groats rinsed under cold water
  • 2/3 cup coconut milk from a carton not thick milk from a can
  • 1 tsp granulated xylitol or stevia for desired sweetness
  • 1 tbsp hemp hearts
  • 1 handful pecans
  • 1 tsp pure Maple syrup optional

Instructions

  1. Place the rinsed buckwheat groats in a bowl with the coconut milk and leave to soak overnight or at least for 3-4 hours for them to become soft for chewing.  Leaving them for less time will mean they will be more crunchy but you are still able to eat them like this.

  2. Once ready for serving, top with the remaining ingredients and eat immediately.

Recipe Notes

This recipe requires overnight soaking if you want the buckwheat goats to be soft for chewing.
