Chia & Coconut Oats topped with Pecans and Goji Berries

  • 1 cup oats
  • 2 cups coconut milk from a carton not a can
  • 2 tbsp chia seeds
  • 1 handful pecans
  • 1 handful goji berries soaked in water for 15 minutes to rehydrate if using dried
  • 1 tbsp pure Maple syrup


  • Add the oats, chia and coconut milk to a bowl and allow to soak for at least 20 minutes.  
  • Add the remaining ingredients to the bowl and serve immediately.


Soak the oats overnight if you have time and remember!
