Coffee will never taste the same again!  Iced coffee is one thing, but adding frozen banana, peanut butter and coconut milk to the mix is a whole other ball game! ‘Wow’! is all that went through my head as I was drinking this.  ‘This is so good’, also featured high on my thought list.  And after finishing, ‘same again tomorrow’ was my last thought….. Make it and see what pops into your head 🙂

I’m not a big coffee drinker.  Not because I don’t’ like it.  I love it. It just doesn’t love me.  I get affected by the caffeine and it sends me a bit wired.  You know the feeling waaa! So I need to limit my consumption to at the very most 1 cup a day, in the morning otherwise, it’s ZING time when I’m trying to fall to sleep at night #wired.   So this coffee infused, iced beverage is worth waiting for, especially on a warm summers day, music on, a glass of this and a little dance around my kitchen, that’s the extent of my partying now I’m in the big 4 0 range with 3 children wahaha! But that’s fine, no need to dress up and nobody sees my bad dancing, no taxi home and the munchies afterwards are self-serve. Win Win.

Coffee Infused Iced Banana, Peanut Butter & Coconut Frappe

Ingredients

  • 100 mls previously brewed coffee, use 1 heaped tsp in 100mls freshly boiled water leave to cool for at least 1 hour or overnight in the fridge
  • 2 small frozen bananas
  • 2 heaped tsp crunchy peanut butter
  • 2 glasses cold coconut milk depending on size of glass you want to fill
  • ice

Instructions

  1. Place the ice, frozen banana, peanut butter and coconut milk into a blender and blitz until slushy.

  2. Pour the mixture into your glasses and top with half of the coffee in each glass.

  3. Give it a quick stir and drink through a (reusable!) straw.

It's handy to have some previously brewed coffee in the fridge ready for this recipe so you can make in an instant!
