Courgette & Coconut Creamed Oats with Blueberries

  • 1 courgette washed, ends removed
  • 300 mls coconut milk from a carton not a can
  • 1 cup oats
  • 1 tbsp hemp seeds
  • 1 tbsp flax seeds
  • 1 tbsp peanut butter
  • .5 cup blueberries washed
  • 1 yellow plum washed and sliced
  • 1 tbsp quinoa pops optional


  • Place the courgette, coconut milk, oats, hemp seeds, flax seeds and peanut butter in a blender and blend until smooth.
  • Serve immediately and top with the yellow plum, blueberries and quinoa pops.
