Courgette, Rocket, Broccoli Sprouts & Walnut with Coriander Cream

  • 2 large courgettes washed ends removed
  • 100 g rocket leaves washed
  • 1/2 cup broccoli sprouts
  • 2 Spring onions washed, ends removed, chopped
  • 1 handful coriander leaves
  • 1 cup walnuts


  • 1 tbsp tahini
  • 1 clove garlic skin removed
  • 1 lemon juice of
  • 40 mls olive oil
  • 1 cup filtered water
  • 1 large handful coriander leaves



  • Begin by spiralizing the courgette, then place it in a large bowl with the rest of the salad ingredients and mix together using your hands.


  • Place all the dressing ingredients into a blender or food processor and blitz until smooth.
  • When ready for serving, add the salad to your serving bowl and drizzle the dressing on top.
  • Serve immediately.
