Courgette, Rocket & Walnut with Coriander & Tahini Cream Dressing
- 2 large courgettes washed, ends removed
- 100 g rocket leaves washed
- 1/2 cup broccoli sprouts
- 2 Spring onions washed, ends removed, chopped
- 1 handful coriander leaves
- 1 cup walnuts
- 1 tbsp tahini
- 1 clove garlic skin removed
- 1 lemon juice of
- 40 mls olive oil
- 1 cup filtered water
- 1 large coriander leaves
Begin by spiralizing the courgette, then place it in a large bowl with the rest of the salad ingredients and mix together using your hands.
Place all the dressing ingredients into a blender or food processor and blitz until smooth.
When ready for serving, add the salad to your serving bowl and drizzle the dressing on top.
