Creamed Oats with Beetroot Swirl, Plum & Hazelnuts
- 1 cup oats
- 1 cup coconut milk
- 1 tbsp maca root powder
- 1 tsp stevia
- 1 tsp cinnamon
- 1 plum washed, stoned, halved
- 1 handful hazelnuts
- 1 juice from one small red beetroot or use beetroot powder mixed with water
- Place the oats and milk in a bowl or jug and blend using a hand blender, until smooth.
- Stir in the maca powder, stevia, cinnamon and beet juice.
- Add the mixture to a serving bowl and top with the plum and hazelnuts.
- Serve immediately.
