Creamy Oats with Blackberry and Vanilla Compote

  • 1 cup oats
  • 1-2 cups coconut milk to your desired consistency
  • 1 tbsp white chia seeds
  • 150 g blackberries
  • 1 tsp coconut sugar
  • 1/2 lemon juice only
  • 1/3 tsp vanilla bean paste


  1. Place the oats, coconut milk and white chia seeds in to a bowl and stir together.  Allow the mixture to sit while you prepare the compote.

  2. Add the blackberries, coconut sugar, lemon juice and vanilla bean paste in to a small pan with a lid and heat on a very low heat for 5 mins.

  3. Add the compote to the soaked oat mixture and serve immediately.
