If you’re looking for a refreshing salad which has your tongue guessing between the flavours, this combination could really hit the spot. It’s refreshing fresh mint leaves against the peppery watercress, sweet, juicy mango pieces and tanginess of the lime juice create a flavour explosion while complimenting each other really well. There’s no need for fancy or elaborate dressing here – just a generous squeeze of lime juice will do the trick. You can serve it with or without the quinoa depending on how light or filling you need it but I prefer it with, as it creates an extra texture and of course, provides a super quality protein to keep you full for longer which hitting that protein quota per meal.

Mint, Mango, Watercress & Quinoa Salad with Lime

Cook Time: 15 minutes

  • 1 cup quinoa rinsed, or use pre-cooked
  • 1 handful watercress
  • several mint leaves
  • 1/2 mango cubed
  • 1/2 lime to squeeze for dressing


  1. Cook the quinoa as per packet instructions - add to a pan of boiling water and cook for around 15 minutes until you see the little 'tails' appearing from the grain and the grain itself becomes translucent.

  2. Drain the quinoa and set to one side to cool.
  3. When you are ready to serve, toss all the ingredients together in a bowl and squeeze of lime juice.

  4. Enjoy!

You can prepare this the day ahead and keep in an airtight container in the fridge.
