This easy, peasy pancake mixture requires no oil to cook meaning they are completely oil free!  Frying pancakes in oil really does bump up the calorie intake so I was eager to find a recipe which I could create pancakes free of oil which would not stick to the pan!  Let’s face it – it’s a nightmare when that happens! If you have a good non-stick pan and keep the heat on a low to medium setting, there really is no need to use oil just so it doesn’t stick to the bottom of the pan.  If I’m honest, I prefer the crisp, crunchy coating a little dash of oil adds to a pancake but recently I’ve been really trying to be conscious about my nutrient and calorie intake, I’m not trying to lose weight, (ok, maybe a few pounds lighter would be nice 🙂 ) I just want to be more conscious of my nutrition and make sure I’m getting everything my body needs – and less of what it doesn’t!  Oils are so calorie dense too that a splash too much can send you over the calorie limit and then you wonder why you’re not losing that last half a stone hanging around your hips 😉 #selftalk

So I present to you a really easy and quick recipe for pancakes which have been tried and tested for not sticking to the pan without using oil!  I ate one on its own while I was waiting setting up the picture and they were pretty good just as they are, but add the creamy vanilla yoghurt and tart passion fruit – now you’re talking! So good!

Just remember – low to medium flame setting on the stove – 40-60 seconds side one and just 20 seconds on the flip side and you’re done!  I made 8 small pancakes (about 10cm each) by taking 1/4 cup measure of the mixture for each pancake, but feel free to just make a few bigs ones – it might just be a little harder flipping!  Have fun!

Easy Wholemeal Pancakes with Vanilla Yoghurt & Passion Fruit

  • 1 cup wholemeal spelt flour
  • 1 cup plantbased milk I used coconut milk from a carton for the lovely sweet flavour but use any you have to hand
  • 1 tsp bicarbonate of soda
  • 1 tsp apple cider vinegar
  • 1 ripe banana


  • 100 mls soy vanilla flavour yoghurt
  • 1 passion fruit


  1. Simply add the pancakes ingredients to a blender and blitz until smooth.  If you do not have a blender, mash the banana as much as you can with a fork, add it with all the other ingredients to a jug and combine well.

  2. I used a 1/4 measuring cup for each pancake and from this mixture, I got 8 pancakes but feel free to make 3-4 larger pancakes to the size you like!

  3. Set a non-stick frying pan on the stove and turn the heat to low-medium.  Wait a few moments for the pan to heat then add the pancake mixture to make one pancake at a time.  Keep the heat low so the pancakes do not stick or burn to the pan.  It should take about 40-60 seconds on the first side and only 20 seconds on the flip side.  You will see bubble start to form on top and the mixture will dry out and cook.

  4. Continue with the remaining mixture until you have made all of the pancakes.

  5. Serve while still warm with lashings of yoghurt and passion fruit!
