Smashed Avocado Toast with Broccoli Sprouts

  • 2 thick slices sourdough bread
  • 1 ripe avocado stone and skin removed, reserve a few slices for topping and mash the remainder in a bowl
  • 1 cup broccoli sprouts
  • 1 pinch good quality sea salt
  • 1 pinch ground black pepper


  • Toast the sourdough bread until golden.
  • Spread the mashed avocado on to the toast, add the remaining ingredients and serve immediately.
