Smashed Avocado Toast with Broccoli Sprouts
- 2 thick slices sourdough bread
- 1 ripe avocado stone and skin removed, reserve a few slices for topping and mash the remainder in a bowl
- 1 cup broccoli sprouts
- 1 pinch good quality sea salt
- 1 pinch ground black pepper
Toast the sourdough bread until golden.
Spread the mashed avocado on to the toast, add the remaining ingredients and serve immediately.
