Sweetened Peanut Butter & Chickpea Biscuit Bites
- 400 g chickpeas pre-cooked, cooled or from a can, 400g drained weight
- 140 g smooth peanut butter
- 1/3 cup pure Maple syrup
- 1 tbsp granulated stevia or xylitol
- 1 tsp vanilla extract
- 1 tsp baking powder
- pinch sea salt
- 3 tbsp wholemeal flour add after blending all the other ingredients together
Preheat the oven to 200 degrees.
Place all the ingredients, excluding the flour, into a bowl and use a hand-held blender to blend to a smooth paste.
Add the flour and combine with a spoon.
Take 1 spoonful of the mixture, form a ball, place on a baking tray covered with baking paper and flatten with the underside of a fork.
Continue until all the mixture has been used. I made 15 from this mixture.
Place in the oven at 200 degrees and bake for 15 minutes.
Remove from the oven and allow to cool before serving.
Store in an airtight container for 2-3 days.
