vegan chickpea peanut butter biscuits

Sweetened Peanut Butter & Chickpea Biscuit Bites

  • 400 g chickpeas pre-cooked, cooled or from a can, 400g drained weight
  • 140 g smooth peanut butter
  • 1/3 cup pure Maple syrup
  • 1 tbsp granulated stevia or xylitol
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • pinch sea salt
  • 3 tbsp wholemeal flour add after blending all the other ingredients together


  • Preheat the oven to 200 degrees.
  • Place all the ingredients, excluding the flour, into a bowl and use a hand-held blender to blend to a smooth paste.
  • Add the flour and combine with a spoon.
  • Take 1 spoonful of the mixture, form a ball, place on a baking tray covered with baking paper and flatten with the underside of a fork.
  • Continue until all the mixture has been used. I made 15 from this mixture.
  • Place in the oven at 200 degrees and bake for 15 minutes.
  • Remove from the oven and allow to cool before serving.
  • Store in an airtight container for 2-3 days.
