Vanilla, Apricot, Blueberries & Pistachios with Oats & Chia
- 1 cup jumbo oats
- 1 tbsp chia seeds
- 1 apricot
- 1 cup blueberries
- 1 tbsp pistachios roughly chopped
- 1 tbsp raw cacao nibs
- 1 tbsp pure Maple syrup
Place the oats and chia seeds in a bowl, cover with water, stir to combine and place a plate on top. Leave to soak for at least 20 minutes (up to an hour at room temperature or overnight in the fridge).
Give the oats and chia a stir. Place the remaining ingredients as a topping and serve immediately.
