Vegan Almond, Banana & Cinnamon Waffles

  • 1 cup oats
  • 1/2 cup ground almonds
  • 2 tbsp chia seeds soaked in 5 tbsp water
  • 1.5 tbsp baking powder
  • 2 bananas ripe
  • 1 tsp cinnamon powder
  • pinch salt
  • 1 tbsp pure maple syrup
  • 2-3 cups water
  • 1 tbsp coconut oil for greasing the waffle iron


  1. Mash the banana with a fork and add to a bowl with all the other ingredients (excluding the coconut oil for the greasing).

  2. Combine the mixture well, adding more water if needed.

  3. Heat your waffle iron and brush with a little coconut oil.

  4. Pour the mixture in to the waffle iron, remember to leave enough space for the mixture to rise during cooking.

  5. Cook for 10 mins or as per your waffle iron instructions.

  6. Serve with yoghurt and seasonal berries / fruit.
