Vegan Almond, Banana & Cinnamon Waffles

  • 1 cup oats
  • 1/2 cup ground almonds
  • 2 tbsp chia seeds soaked in 5 tbsp water
  • 1.5 tbsp baking powder
  • 2 bananas ripe
  • 1 tsp cinnamon powder
  • pinch salt
  • 1 tbsp pure maple syrup
  • 2-3 cups water
  • 1 tbsp coconut oil for greasing the waffle iron


  • Mash the banana with a fork and add to a bowl with all the other ingredients (excluding the coconut oil for the greasing).
  • Combine the mixture well, adding more water if needed.
  • Heat your waffle iron and brush with a little coconut oil.
  • Pour the mixture in to the waffle iron, remember to leave enough space for the mixture to rise during cooking.
  • Cook for 10 mins or as per your waffle iron instructions.
  • Serve with yoghurt and seasonal berries / fruit.
