A simple but luxuriously tasting breakfast perfect for a Monday morning to ease you into the week…. 🙂

Wild blueberries are one of my favourite fruits to eat.  Rather more expensive than you average tub of blueberries but, as a treat, I think they are worth every penny!  My hands and nails are stained blue from creating this breakfast this morning, a sure sign that these liitle berries are packed full of their superfood boosting power of anthocycanins – the antioxidant pigment which gives them their deep purple colour.  I buy them frozen so I can keep them from spoiling and I just pop a handful onto warmed porridge oats, like I have here, to give a nutritional flavour boost to my breakfast.  Teamed with a spoonful of runny almond butter, banana slices and a few squares of dark chocolate to melt into the oats, all drizzled in some pure Maple syrup to hit that sweet note – what more do you want to start the day?!

Warm Oats with Wild Blueberries, Almond Butter & Chocolate

Ingredients
  

  • 1 cup jumbo oats soaked in water and apple cider vinegar overnight, rinsed and drained
  • 1 cup plant milk
  • 1 cup frozen wild blueberries
  • 1 tbsp almond butter
  • 1/2 banana sliced
  • 1 tsp pure Maple syrup
  • 2 cubes dark chocolate

Instructions
 

  • Soak the oats overnight in plenty of water and a dash of apple cider vinegar.  Rinse the following morning, then place them in a small pan with the plant milk and heat gently for about 5 minutes to cook through.
  • Add the cooked oats to a bowl and top with the remaining ingredients.
