Chia & Coconut Oats topped with Pecans and Goji Berries

  • 1 cup oats
  • 2 cups coconut milk from a carton not a can
  • 2 tbsp chia seeds
  • 1 handful pecans
  • 1 handful goji berries soaked in water for 15 minutes to rehydrate if using dried
  • 1 tbsp pure Maple syrup
  1. Add the oats, chia and coconut milk to a bowl and allow to soak for at least 20 minutes.  

  2. Add the remaining ingredients to the bowl and serve immediately.

Recipe Notes

Soak the oats overnight if you have time and remember!
