Mint, Mango, Watercress & Quinoa Salad with Lime

Ingredients
  • 1 cup quinoa rinsed, or use pre-cooked
  • 1 handful watercress
  • several mint leaves
  • 1/2 mango cubed
  • 1/2 lime to squeeze for dressing
Instructions
  1. Cook the quinoa as per packet instructions - add to a pan of boiling water and cook for around 15 minutes until you see the little 'tails' appearing from the grain and the grain itself becomes translucent.

  2. Drain the quinoa and set to one side to cool.
  3. When you are ready to serve, toss all the ingredients together in a bowl and squeeze of lime juice.

  4. Enjoy!

You can prepare this the day ahead and keep in an airtight container in the fridge.
